The year 2025 marks the tenth anniversary for the Consortium of the “Finocchiona IGP,” ten years of craftsmanship, territory, quality and foresight, as volumes have almost doubled since the Consortium’s founding year, towards a turnover of around 25 million euros.
Finocchiona, a product with a strong identity of Tuscany that has also been looking at important markets such as America, Germany and England for a long time, uses strict disciplinary of the producers, as an excellent combination capable of guaranteeing purely high quality standards, in strict compliance with good traditional practices, welcoming the “great knowledge” of the Tuscan hills. In the interesting conference that took place in the Palazzo Sacrati Strozzi in Florence, great prominence was given to the words of the Consortium where the oasis of Finocchiona IGP stands out, an initiative born from the collaboration with “3Bee”, climate tech company”, leader in technology for the protection of ecosystems. All this leading to the birth of a complex of technological hives, as well as native plants in the hills near Cortona, to further raise awareness of the quality of life of bees as well as the biodiversity of their habitat, generating an impact on about 300,000 bees with 300 million flowers pollinated per year.
Why are we also talking about bees? Simply because such a project has turned the tide toward new recipes created with Her Majesty the Finocchiona and honey produced in the hives, initiating that winning marriage between that consortium and restaurateurs in Tuscany, toward genuine as well as delicious signature recipes that can be replicated even in the home.
We asked Stefania Saccardi, Vice President of the Region of Tuscany and Agribusiness Councillor, about this good Tuscan cured meat that is increasingly popular in the United States. It seems almost as if the doors have opened wide for such goodness.
“Indeed, we have done a long work on this that started as early as 2023, actively working in the health and agriculture sectors. Therefore…we have done it, since in this period the first shipment to overseas should leave, hoping that everything will run smoothly given the importance of that market as it has been for the wine and oil of our region. Undeniable the thought of duties” – he continues – “counting, however, on a high quality product, certified IGP Toscana. The conditions for a good reception are all there.”
We are talking about a good food that nevertheless has its fair share of fat. Is it conceivable for the American people to accompany it as we Italians do with good vegetables, or is it preferable with good bread and excellent salty schiacciata?
“Ehh, good and difficult question: we know that their food plan is a little different from ours despite the fact that compared to other foods, this one is more wholesome.”
With these U.S. tariffs postponed for a few months will there be a good recovery especially in the stock market?
“Meanwhile, the latter have shown good signs of recovery from previous times: the suspension should be considered good news since there will be more time in negotiations. Frankly, President Trump’s policy is difficult to read…one day he is oriented with duties at 200% then at 20%, then he suspends them…then they go to 10%…mah, I think the only anchor, the only real thing, is to invest in the quality and value of our products. We will then address hopefully as Europe and not as a country, the issues consequent to the policies of the United States.”
So “The Sword of Damocles” is always looming.
“Unfortunately, yes, let’s hope for common sense.”
