After years in gnocchi production and distribution, Nicholas Wooller saw a blind spot in the food world: gnocchi was being treated like pasta’s afterthought. Determined to change that, he set out to honor its roots while giving it a bold, modern identity. Soon after, Alessandro Sita joined the journey, bringing entrepreneurial drive and a shared passion for honest, high-quality food. Together, they shaped Nocca® around one clear philosophy: food should be genuine, joyful, and crafted with integrity.
Today, Nocca® is recognized as the world’s first all-natural, shelf-stable gnocchi brand. With its new Nolita quick-service concept, it’s bringing Italy’s most comforting dish to New Yorkers in an accessible, grab-and-go format that doesn’t compromise on authenticity or flavor.

The Nocca® QSR menu features a curated selection of signature gnocchi dishes, including classics like Gnocchi al Pomodoro, Gnocchi alla Vodka, Gnocchi al Pesto, Gnocchi Cacio e Pepe, and Gnocchi Bolognese. Diners can customize their meal with add-ons such as burrata, Italian sausage, chicken, and truffle, all finished with premium ingredients like Calabrian chili, extra-virgin olive oil, and grated Italian cheese.
